Lemon balm is one of the most beautiful garden herbs. It helps against inflammation, mosquito bites and is suitable for the kitchen.
I made a pesto from basil and lemon balm.
Only the leaves you should taken from the lemon balm.
Put all the ingredients in a blender and chop them until you get a creamy paste. If you don’t have a blender, you can also use a hand blender or traditionally mortar with pestle
Put the pesto in a sealable jar. Add olive oil until the surface is completely covered.
This prevents the basil and lemon balm oxidizing and turning brown. The pesto can be stored in the refrigerator for up to a week.
You can vacuum the pesto and freeze aswell
